2006 Sausage Review #4 Louisiana Hot Link

Pleasant Surprise.. damn good sausage
Bun was perfect size for the sausage, and the bread compact but soft.
The skin of the sausage gave way freely, but had some chew after it was broken.
Really nice texture, similar to the Kosher (see review #2)
Good flavor, not too salty, and not greasy at all.
QUITE A BIT of spice...MUCH more than I was expecting.
The spice is more in the form of mouth burning after the fact, than it is in flavor up front.
Could use more "up front flavor spice" than "after the fact, I need a beer spice"

Now to give you a gauge of the spice I will say this.
Pace Hot Picante Sauce is a good level of spice, and mouth burns, but won't cause me to sweat.
This was probably just a shade spicier than the Pace Hot.
(picked Pace as the example, because I assume many people can use as point of reference)

All told a very good sausage... not great.... but recommended.. with a cold beverage
